2010 December: Quantity Food Production ~ I Block at the CIA.

K16 / K11: Massive Production - Put up or shut up.

This is the main cafeteria kitchen.  A majority of the students eat from here 3 times a day.  All the food is plated to order.  It is cooked in massive quantities as each service period can serve anywhere from 200-400 meals or more. It is prepping and cooking at a harried pace and the first real glimpse of the real world kitchen life for many of the students.  No more grilled veggies for one.  It is grilled veggies for 80.  Each team had to put up or shut up.  Many students get worked over in this class.  It is the grinder that polishes the rocks into gems.  It is a right of passage for the students into their reward in J Block.  I had a blast. I enjoyed the Chefs as well.  The K11 breakfast class was rough the first few days when you have to show up for class at 4a m bought oh well. It was only for 7 days.
